Step-by-Step Opening Playbook

Every step from signing to opening day

A plain-English how-to for each thing the three of you need to do to open the bagel, coffee & smash-burger shop in Las Vegas. Because this is essentially a second-generation space — the working hood, walk-in, and 3-compartment sink are already here — your buildout is mostly finishes and equipment, and the cost estimates below reflect that. Open a card for the walkthrough and a cost estimate, check it off when it’s done, and note who did it. Turn on Team Sync to share progress live across all three of you.

Team Sync You are Passphrase 🔒end-to-end encrypted {{ syncLine }}
or join one:

All three of you pick the same passphrase (share it privately — in person or by text, never written in the notes). One of you taps Create shared room and sends the others the room code. Your data is encrypted on your device with the passphrase before syncing — the relay only stores scrambled text it can’t read, so only you three can see it. Lose the passphrase and the data can’t be recovered.

Start the long poles now. Because this is a second-generation space (hood, walk-in, and sink already in), your buildout is light — so the real gating items are your operating agreement (Step 5), your own health permit & inspection (Steps 17 & 23), and ordering the espresso machine (Step 19), which has a long lead time. Engage an insurance broker early too. Dollar figures below are rough Las Vegas estimates — confirm current fees with each agency and vendor.

Your address (5697 S. Jones Blvd, 89118) sits in unincorporated Clark County, so the county — not the City of Las Vegas — handles your business license, building permits, and fire inspection; the Southern Nevada Health District handles food permits county-wide. All dollar figures are rough estimates to help you budget, not quotes — actual costs vary widely. This playbook is practical guidance, not legal or tax advice; verify current requirements and fees with each agency, your attorney, and a CPA.
